The Perfect Coffee for a Rainy Day

One of the most interesting beans we have ever seen here has been this rare offering. Indian Monsoon has a very interesting processing story, the cherries are picked from the plant, de pulped and then sent off to warehouses that are in the middle of the area’s Monsoon rain season. There, they will lay out all the beans where the process begins, they will absorb the moisture in the air caused by the monsoons as well as the sea air due to being close to the ocean. This combination of moisture will cause the beans to turn pure white and extra clean. When roasted to a Medium/Dark, it’s really a mellow tasting coffee, almost to be an afternoon relaxing brew. literally perfect for a rainy day ironically.
